Ingredients
- 1 acorn squash, halved and seeds removed
- ¼ cup chopped walnuts
- ¼ cup dried cranberries
- 2 tbsp brown sugar
- 1 tbsp melted butter or olive oil
- 1 tbsp honey or maple syrup
- ½ tsp ground cinnamon
- Pinch of salt
Directions
- Preheat oven to 400°F.
- Place squash halves cut-side up on a baking dish.
- In a small bowl, mix walnuts, cranberries, brown sugar, butter (or oil), honey (or maple syrup), cinnamon, and a pinch of salt.
- Spoon mixture evenly into the hollow centers of each squash half.
- Cover loosely with foil and roast for 30 minutes. Remove foil and bake another 15–20 minutes until squash is tender and topping is caramelized.
- Serve warm, drizzled with extra honey if desired.
