Ingredients
Ingredients:
- 1 medium spaghetti squash, halved and seeded
- 1 tbsp olive oil
- Salt and pepper
- ½ lb ground beef, turkey, or plant-based ground
- 1½ cups marinara or tomato sauce
- 1 garlic clove, minced
- ½ tsp dried oregano
- ½ tsp salt
- Fresh chopped parsley or basil (optional)
Directions
- Preheat oven to 400°F. Rub cut sides of squash with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 40–45 minutes, until tender.
- While squash roasts, heat a skillet over medium heat. Brown the ground meat, breaking it up as it cooks. Drain excess fat if needed.
- Stir in garlic, marinara sauce, oregano, and salt. Simmer for 10 minutes.
- Once squash is done, use a fork to lightly scrape some strands loose (but leave them inside the shell).
- Spoon meat sauce into the squash halves. Optionally, top with chopped herbs or grated cheese.
- Serve warm, directly from the squash boats.
