Ingredients
- 2 delicata squash, halved, seeded, and sliced into ½-inch rings
- 1½ tbsp olive oil
- Salt and pepper to taste
- ⅓ cup crumbled goat cheese
- ¼ cup pomegranate seeds (arils)
- 2 tbsp chopped fresh parsley or cilantro
- Optional: drizzle of honey or balsamic glaze
Directions
- Preheat oven to 425°F.
- Toss delicata squash slices with olive oil, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet.
- Roast for 20–25 minutes, flipping once, until golden brown and tender.
- Transfer roasted squash to a serving platter. Sprinkle with goat cheese, pomegranate seeds, and chopped herbs.
- Finish with a light drizzle of honey or balsamic glaze, if desired. Serve warm or at room temp.
